Ingredients:
- 1 ½ lbs (700g) pork shoulder or pork loin, cut into bite-sized cubes
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 2 bell peppers (red and yellow), chopped
- 3 cloves garlic, minced
- 1 tablespoon paprika (sweet or smoked)
- 1 teaspoon caraway seeds (optional, for authentic flavor)
- 1 cup beef or chicken broth
- 1 can (14.5 oz) diced tomatoes (or 2 cups fresh tomatoes, chopped)
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Brown the Pork:
- Heat Oil: In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
- Brown the Pork: Add the cubed pork in batches (to avoid overcrowding) and brown on all sides, about 5-7 minutes per batch. Remove the pork from the pot and set aside.
2. Sauté the Vegetables:
- Cook the Onions: In the same pot, add the chopped onion and cook until soft and translucent, about 5 minutes.
